Cabarita Spirits began with founder and distiller Keri's dream of creating memorable rum with a genuine connection to place. Inspired by rum cultures encountered around the world, she eventually brought that ambition home to Cabarita Beach, where sugarcane fields, subtropical conditions and the coastal character of the Tweed provide a distinctly Australian setting for the craft.

Soltera begins with molasses sourced from the nearby Condong Sugar Mill near Murwillumbah. Fermentation, distillation, blending, bottling and labelling are handled in small batches, with rum double-distilled through a handcrafted Australian copper pot still named Félix after Keri's grandfather. The result is a growing collection that includes Blanco Lightly Spiced Cane Spirit, Oro Barrel-Aged Cane Spirit and Northern Rivers Pure Single Rum.

Northern Rivers Vodka provides a cleaner, contemporary expression of the same philosophy, while every spirit is made using natural ingredients without unnecessary additives or preservatives.

Sustainability is built into production rather than simply added to the story. The distillery operates using certified renewable energy, production water and by-products are repurposed in the garden, and reusable packaging helps reduce waste. Through the Good Rum Initiative, 1% of sales is also directed towards environmental and community causes.
