Highwayman Whisky is an independent Byron Bay whisky producer built on a fascination with the spirit, its stories and the seemingly endless possibilities hidden inside a barrel.

Created by founder and distiller Dan Woolley, Highwayman is the culmination of decades spent exploring whisky around the world. Dan's journey has taken him through some of the world's great whisky-producing regions and distilleries, developing the knowledge, palate and relationships that would eventually become the foundation for Highwayman.

Today, that experience is distilled into highly limited Australian whisky releases produced from Highwayman HQ in Byron Bay. Rather than chasing large-scale production, Highwayman embraces experimentation, individuality and scarcity, with small-batch releases exploring different casks, finishes, maturation approaches and flavour profiles.
