Founder and distiller Dan Woolley's path to Highwayman followed decades spent exploring whisky, travelling through renowned producing regions and visiting distilleries around the world. The knowledge, palate and relationships developed along the way eventually found a home at Highwayman HQ in Byron Bay.

Rather than pursuing large-scale consistency, Highwayman embraces small-batch production, experimentation and scarcity.

Highly limited releases explore different casks, finishes, maturation approaches and flavour profiles, creating what feels like an evolving liquid library. One bottle can tell a very different story from the next, and individual releases may never appear again in precisely the same form.
