Rosefina's story might have unfolded in the Northern Rivers, but the flavours at the heart of the restaurant reach all the way back to family kitchens in Mexico.

Owner Josie Richardson first developed Rosefina's through a relaxed garden café in Brunswick Heads before finding a permanent home in Billinudgel. Today, Rosefina's Mexican is a lively taqueria and cantina where traditional dishes, margaritas and a little retro character come together.

In the kitchen, Mexican chef Rodrigo draws inspiration from his grandmother's cooking and his experience growing up around family restaurants in Mexico City.

That connection comes through in dishes such as slow-cooked beef birria, prepared with Mexican chillies, herbs and spices, and pollo con mole, where poached chicken meets a deeply layered sauce of chillies, spices, seeds, nuts and ceremonial cacao.

Tacos naturally have their place, joined by elotes, quesadillas, share plates and desserts including chocolate tres leches. The menu is designed to encourage the kind of eating familiar across Mexico, sharing dishes, passing tortillas and sides around the table and taking your time over the meal.

A full bar, margaritas, cocktails, happy hour and outdoor seating add to the cantina atmosphere, with takeaway available when staying for the fiesta isn't on the agenda.
