Founded in 2020, and now led by owner Sheldon Thompson since August 2025, The Brew and Bake Co has grown into a true Kingscliff favourite; known for its chunky cookies, crunchy toasties, quality coffee, and service that feels genuinely personal.

Drawing on more than 30 years of leadership and hospitality experience within the cruise industry, Sheldon brings deep roots in tourism together with a practical, hands-on management style and a clear commitment to high standards. From sourcing exceptional ingredients and supporting local producers to refining systems behind the scenes, his focus is simple: consistency, quality, and connection. Under his direction, the cafe continues to evolve while staying grounded in community and the simple pleasure of a great cup of coffee shared by the beach.

Central to Sheldon’s vision is The Brew and Bake Co’s signature Sweet Lady blend. Crafted exclusively for the cafe and roasted to order in small batches in Murwillumbah by The Branches Coffee Roasters, Sweet Lady carries a story as rich as its flavour profile. The beans are sourced from smallholder farms in Papua New Guinea, Guatemala, and Colombia and selected for depth, balance, and character.

What makes the Sweet Lady blend truly distinctive is its partnership with Lass Malo, a women-led initiative in Papua New Guinea’s Eastern Highlands. There, local women hand-sort each batch of beans, ensuring a clean, consistent cup while creating meaningful economic opportunity for smallholder families. The Sweet Lady name honours their skill, care, and the traditional, low-input farming practices passed down through generations.

The Brew and Bake Co’s commitment to local doesn’t stop at coffee. Wild, raw honey harvested from the cafe’s own bee hives in nearby Duranbah is used throughout the menu, adding a distinctly Northern Rivers sweetness to coffees, smoothies, and milkshakes – a natural extension of Sheldon’s focus on small-scale, thoughtfully sourced produce.

More than just a cafe, The Brew and Bake Co reflects the spirit of Kingscliff itself. It’s where locals catch up over morning coffee, visitors pause before heading to the beach, and every Sweet Lady cup connects community, craft, and purpose. Sheldon and his team continue to build on that foundation – honouring what makes the cafe special while thoughtfully shaping its next chapter.
