PASTA BABY!

Twirl it, slice it, slurp it, winter is pasta season and we’re leaning all the way in. There’s something about a bowl of pasta that feels like home: the scent of slow-simmering sauce filling the room, a bottle of wine breathing, ready to pour, and that unmistakable nostalgia of Nonna’s kitchen.

This season, we’re celebrating the plates that do exactly that — silky ribbons made for rich ragù, handmade shapes that catch every last drop, and baked layers stacked with creamy ricotta and molten cheese, pulled from the oven in golden-edged perfection. (We can almost hear Nonna insisting, “eat, eat!” in the background.)

From beachside trattorias to tucked-away local gems, this is your carb-loaded hit list for the Northern Rivers and Gold Coast. Now go forth and get saucy.

NONNA’S RECIPE, NO NOTES

At LiTO, pasta is personal. Tucked inside the Mondrian Gold Coast, this light-filled beauty is all about elevated simplicity and the easy rhythm of Italian living. With bold coastal flavours, seasonal produce and a soundtrack that always hits, it’s just as suited to a post-surf flat white as it is to a long, lingering winter dinner.

The hero? Nonna Vitale’s Mafaldine Sugo di Salsicce, a slow-braised pork sausage and Chianti ragù that tastes like it’s been simmering since Sunday morning. Named for owner Chris Vitale’s grandmother, it’s rooted in the kind of genuine home cooking that doesn’t need reinventing. Those ruffled mafaldine edges are designed to hold the rich sauce and deliver deep, layered comfort in every bite.

Settle in, pour a silky pinot and let the room hum around you. Equal parts coastal cool and old-world soul, LiTO makes a compelling case for pasta as a weekly ritual, not just a winter fling. Especially on Pasta & Pinot Tuesdays, at $30 a head, it’s the easiest midweek decision you’ll make.

BEACH, WINE, RAGÙ — REPEAT

At Tommy’s Italian, the soundtrack is ocean breeze and clinking glasses, and the pasta? Consistently excellent. Born from a deep appreciation of Italian food and quality produce, this Currumbin institution has been feeding the coastline since 2019, every dish reflecting that founding intention — handmade pasta, fresh ingredients and simple, well-executed plates.

The pappardelle lamb ragù has been a mainstay since day one, and for very good reason. Slow-cooked lamb, braised low and long in red wine until deeply rich and glossy, then folded through wide ribbons of pasta that catch every drop. A snowfall of pecorino lifts and sharpens, keeping things balanced and seriously craveable.

Generous, comforting and refined, it’s a constant for a reason, and one that feels especially right in the cooler months. Add in the laid-back coastal backdrop, a golden Currumbin sunset and a wine list that knows exactly what it’s doing, and you’ve got the kind of pasta you plan your week around.

LA DOLCE VITA, KINGSCLIFF STYLE

Warm, welcoming and made for long lunches or slow, cosy dinners, Giulia Italian serves up classic Italian cooking with a polished coastal edge. Set in the heart of Kingscliff, the space is made for gathering, with rustic textures, soft light and that unmistakable Italian warmth that makes every visit feel like a trip back home.

Handmade pasta is the heartbeat of the menu, crafted with care and paired with fresh, local ingredients that let each dish shine. Think traditional recipes done right — rich, slow-cooked sauces, perfectly al dente textures and flavours that feel both nostalgic and entirely of the moment. Take the squid ink tagliolini, layered with Moreton Bay bugs and prawn bisque, lifted with confit garlic, cherry tomatoes and a gentle hit of nduja and chilli. It’s the kind of dish that feels both indulgent and unmistakably coastal.

Whether it’s a shared table with friends or a quiet Friday night dinner, Giulia finds that sweet spot between comfort and refinement. It’s pasta that feels like home… if home came with a stellar wine list and someone else doing the dishes.

LANEWAY VIBES. ITALIAN MOOD

Tucked inside the Feros Arcade, Puglia Pasta Bar brings the quintessential Italian village experience to the heart of Byron. Spilling into laneway-style seating, where red chequered tablecloths and the scent of garlic and fresh basil set the scene, it’s all very la dolce vita — Aperol Spritz in hand and plates that pop with colour.

The pasta? As joyful as the setting. Think perfectly al dente spaghetti tossed through vibrant pesto, loaded with fresh basil, toasted pine nuts and shavings of parmesan that scream, just one more bite. Everything is made fresh daily, blending Northern Rivers produce with premium Italian imports to create dishes that feel authentic and effortlessly fresh. The chilli-garlic prawn is a standout worth building your evening around, while the ragù hits the spot for a classic craving, day or night.

Fully licensed and pouring all the right things — Sangiovese, Chianti, Prosecco, Aperol Spritz and the zesty house Byroncello Spritz — this is the kind of place you eat, drink and be merry. Whether you’re dining in or grabbing takeaway, Puglia delivers big on flavour and that unmistakable gather-round-the-table vibe. Nonna would be proud.

AN OCEANFRONT AFFAIR

Set over the ocean with views that practically beg you to linger, Capiche is Ballina’s answer to refined Italian with real coastal soul. This is the kind of place where relaxed lunches reign, the wine is considered and the pasta is the undisputed hero.

The menu is a seasonal celebration of bold flavours and local produce, built for sharing and leaning beautifully towards the sea. The crab spaghetti neri alone is worth the drive – inky strands wrapped around sweet local crab, with just enough richness to feel truly indulgent, while the tagliatelle ai funghi brings a rich, truffle-laced option that’s a standout for vegetarians.

Winter adds its own kind of magic. Softly lit evenings, unhurried tables and whales passing by the window as if part of the dining experience. From intimate date nights to long-table celebrations, to weddings with authentic Euro summer vibes, Capiche holds it all with flair.

Even when a more casual beachside moment is calling, grab a woodfired pizza to takeaway, because every seat is the best seat in the house. Our pick though? It has to be the pasta, baby.
